Instagram determines my next travel destination. After seeing a picture of The Great Blue Hole in Belize. A large sinkhole with beautiful contrasting shades of blue., surrounded by a ring of coral reefs. I decided that was it.

After researching, I learned that The Great Blue Hole is one of the top 5 places to scuba dive in the world and also one of the world’s most dangerous places for diving too. But as an adventurer, that only sells it more. As usual, I want it; I get it. I’ve built up five years of courage to rewrite this post finally. Because it is by far the most remarkable memory in my life, which not everyone is lucky enough to experience, so I feel obligated to share it with you.
It was July 2016. We booked a 1-week trip. Belize was my last trip before my hemorrhagic stroke took my life away and wiped out my memory. I’ve had a much more detailed travel blog written out while I was on my trip, but after my A-hole of an ex. robbed everything from me while I was hospitalized. He took my GoPro, which contains all the pictures and films taken on that trip and my hard drive, which was where I stored my articles and all of my photography works.

Over the five years, I’ve tried multiple attempts to puzzle bits and pieces to rewrite this travel blog, but it just hurts too much whenever I try to remember. Now that Taiwan is going to shit, and it’s too risky to go out, I’ve finally worked up the courage to write this blog. Can I get a round of applause first, please?

    • Belize 1 Week Travel Blog Day 1:

I remember it was about a 7 to 8- hour flight from Toronto to Belize, maybe plus a few boat rides. We spent the first two nights at El Secreto, a 5-star barefoot luxury resort in San Pedro, a town in Ambergris Caye, Belize‘s largest island, which cost us about $700 CAD and is regrettably shut down now.

I remember arriving very late at night because of the 7-hour flight. We were tired and famished, and the only place still open available for food was the bar. So we grabbed a quick bite and a few drinks, then went back t our villa to pass out. Our villa was equipped with a private outdoor pool with beautiful drapes, a two-seat sofa, a table, and a king-size bed. The thatch roof adds a bit of a rustic look to it.
Ambergris Caye got its name from the Old French word “ambre gris,” “which means sperm whale’s feces. Do not underestimate the “waste” of these sperm whales. These grey, stonelike feces can be used to produce perfumes and can sell up to $10,000 per pound (to the best of my recollection). Hence, you will often find locals and perfumers lingering by the beaches hunting for ambergris.

  • Belize 1 Week Travel Blog Day 2:

After a good night’s sleep, we toured the town of downtown, San Pedro.
San Pedro is a busy town located along the coast on the southern part of the Ambergris Caye island. Visitors and locals travel by foot, scooters and golf carts. Its streets are sandy and lined with wooden houses and local shops and restaurants, making it gorgeous. San Pedro is the largest town in the Belize Rural South constituency second-largest town in the Belize District.
most “San Pedronos” originally came from Mexico, hence it has a strong strong Central America cultural influence. Visitors can get by by either English or Spanish. The town reminds me of Central America,Buildings and signs are painted with bright, bold colours.

When we arrive at a destination so different from our usual luxury travel style, we want to travel the local way. So instead of looking up top-rated restaurants, we asked the locals where the best place to eat is. The locals recommended Elvi’s Kitchen, located on Pescador Drive, which is easy to find by our golf cart. The restaurant was lively and busy because it was the most popular restaurant in town.

The restaurant served comfort foods like burgers and fries, sandwiches, rice mains, seafood and Mexican food.

We ordered a “Fish, Lobster, Shrimp or Chicken in Black Bean Sauce ($30),” which is served with Elvi’s Kitchen‘s homemade black bean sauce and topped with truffle oil, tomato, onion andcilantro relish. This dish was quite unique and its something I’d never tried before even when I travelled to Mexico, Panama and Colombia. We also ordered a “Crab Claws ($67) served in garlic butter, roasted garlic chipotle, roasted garlic, steamed and served cold with key lime butter or homemade remoulade. The crab claws was remarkable. After a big lunch, we toured the town speeding in a golf cart, which was super fun. Since the town is located along the coast, I’m sure we did some scuba diving or snorkelling tours. and that pretty much took up the whole day.
