The Treat Report was compiled by top food futurologist Dr. Morgaine Gaye, with contributions by the “Treat Collective”, an international group of bakers Lily Jones (UK) and Silene Da Rocha (Spain), pastry chefs Maria Luisa Arias (Colombia) and Sofia Cortina (Mexico), food blogger Vallery Lomas (USA), food photographer/author Olesya Kuprin (Russia), founder/Chef of Le15 Patisserie Pooja Dhingra (India) and mixologist/founder Fedrico Riezzo of Catch Events (Ireland).
Here are the Top 10 Treat Trends:
Oat Everything – Going way beyond old school “porridge”, oats will be prevalent as a dairy replacement when turned into oat milk. Think oat milk-based sweets, ice cream, yogurt, double cream, and cheeses that taste great and are easily digested. Oats are also gluten-free.
Clashing Combos – Mixing sweet and salty together is a winning combination. This year takes it to another level with ice cream fries, Danish dessert pizza, milk chocolate covered potato snacks with caramel flavour.
Japanese Indulgence – Japan is known for its tasty and adorable treats like its fluffy pancakes, and ice cream in Taiyaki fish-shaped waffle cones.
Spread the Love – Spreads with dynamic flavour profiles will be everywhere. Hummus with apricot or chocolate, Bourbon peanut butter, Sloe Gin spreads and Champagne butters add pizzazz to the table.
How’s this for a glow-up? – Food and drinks can glow in the dark when edible algae are added to cocktails and desserts. The algae add a bioluminescent glow in low light and create an out of this world look…
As Light as Air – 2020’s whipped Dalgona Coffee started this trend and it will continue throughout 2021. Whipped air is used to add lightness to ice cream, puffed cheese, cakes, hot chocolates, and even candy floss.
Extra Sweet(s) – The reinvention of classics like the macaron, Danish pastry, cakes, and ice creams using new bright and bold colours and flavours Think a Fruity Pebbles Macaron Ice Cream Sandwich or Nougat Crown made with almond paste, custard, or hazelnut cream.
I Should Cacao! – the sweet and fruity Cacao pulp will be a flavourful alternative to coconut water. making jams and spreads with it is a new trend.
Munch on Mochi – A Japanese favourite, mochi, is now found everywhere; ice cream topped with an extra mochi layer, mochi pancake mixes, mochi doughnuts, and even savoury skewers of stuffed mochi balls.
A Drop of Self-care – The self-care trend from 2020 will continue in 2021. There will be demand for botanical drinks that offer healthy qualities like ‘calm’, ‘focus’, ‘glow’, and ‘rest’ and fermented beverages like hop water; a non-alcoholic drink that has the taste of hops.
