I hope everyone had a great mother’s day! I’m a hopeless romantic. Over the years, I’ve tried too hard to impress my mom when it comes to holidays just to find out not everybody is on the same page.
So this year, I decided to bake a cake with my single hand and make something thoughtful and practical without breaking the bank that I don’t have. Plus, I mean, who doesn’t like cake?
Now I’m no chef, and the thing I hate about Taiwan is our apartments don’t come with ovens, so we usually can only purchase small ovens like this.
Luckily this Basque cheesecake has an easy recipe that doesn’t require professional baking equipment, which I’ll be showing you today. If a stroke survivor can do it, you all can! You’re welcome! I baked in a safe environment with the monitor of my lovely occupational therapist. I do recommend monitoring if you’re also a stroke survivor.

祝天下媽媽們母親節快樂!殘編希望辛苦的媽媽們都過了愉快的母親節。殘編是浪漫主義者,在過去幾年為了慶祝節日送花送禮都換不回一個笑容。於是今年揍決定單手下廚親自手作西班牙的巴斯克 乳酪蛋糕。殘編平常不烘培,這種蛋糕的好處就是不需要任何太專業的器具或知識就可以簡單做成,就連台灣自行買的小型烤箱就可以烤,幾乎是零失敗率。如果我殘障人士單手就能一天以內做成,相信大家更能輕鬆完成。不過殘編是有漂亮的老師在旁監督的,所以如果您也是中風患者,殘編還是呼籲各位以安全為先。

Like New York cheesecake, Basque cheesecake has a richer cheese taste. However, the Basque version doesn’t require a separate crust as it develops naturally through high-temperature baking

  • Preparation / 事先準備:

Preparation for baking is crucial! Make sure to wash your hands, clean your worktops, and wash all kitchen utensils thoroughly, and dry them thoroughly to avoid bacteria from growing or spreading. Wash your hands with sufficient soap or handwash for at least 20 seconds. I’m germaphobic, so I always make it to 30. Since my mom has a sensitive stomach, I made it to 60 seconds today.

記得要開工前先清潔所有檯面、將所有廚房用具洗乾淨跟擦乾、並徹底把手洗乾淨,以免細菌滋生或擴散。 首要用足夠的肥皂或洗手液搓至少20秒鐘。 殘編有潔癖所以通常都搓30秒。今天蛋糕是為媽媽做的,而殘媽的胃很敏感,所以今天我洗60秒。

Easy Basque Burnt Cheesecake Recipe / 簡易巴斯克乳酪蛋糕食譜:

Basque Burnt Cheesecake (6″) ingredients / 巴斯克乳酪蛋糕材料(6吋) :

  • Baking scale / 烘培用電子磅秤: 1 / 1 台
  • cream cheese / 奶油乳酪: 250g (1 pack / 一包)
  • sugar / 砂糖: 40g
  • egg / 雞蛋: 2 / 2顆
  • whipping cream / 打發鮮奶油: 160g / 160克
  • Cake or pastry flour / 低筋麵粉: 20g / 20克
  • 6吋圓形蛋糕模 6-inch cake pan: 1 / 1個
  • Baking paper / 烘焙紙: enough to cover your 6″ pan/ container / 足夠撲滿6吋容器 

Easy Basque Burnt Cheesecake Recipe Steps / 簡易巴斯克乳酪蛋糕作法:

  • Step 1 /步驟一:

beat cream cheese (250g) until smooth

將奶油起司攪散。

Tip / 提示:
low-heat to soften if the cream cheese is too hard. You can use a larger utensil such as a rice scooper to stir first, then switch to a smaller mixer later when the ingredients are softer.

如果奶油起司太應可隔水低溫加熱加速軟化。可先用飯瓢等較大的器具攪拌,等材料軟化再換小一點的攪拌器。

  • Step2 / 步驟二:

Add 40g of sugar into the cream cheese and mix well.

將50g的砂糖分次放入攪散的奶油乳酪中,並攪拌均勻。

  • Step 3 / 步驟三:

Prepare two eggs, crack and add them into the mix separately and mix well.

將2顆雞蛋分次加入麵糊之中,並使用刮刀混合均勻。

  • Step 4 / 步驟四:Add 160g of whipping cream into the mixture and mix well.

加入160克打發鮮奶油後混合均勻。

  • Step5 / 步驟五:

beat and mix until batter is very smooth and silky, filter out any chunks and smooth out all bubbles on the surface.

攪拌混合到麵糊完全光滑為止,過濾掉所有雜質並清除表面上的所有泡泡。

  • Step 5 / 步驟五:

Wrap 6″ pan or container with baking paper

將6吋烤模或容器鋪好烘焙紙。

  • Step 6 / 步驟六:

Pour the batter into the container, slightly shake it to release excessive air to avoid bubbles or air pockets in the baking process.

將麵糊倒入模型、稍微搖動一下將空氣釋放出烘烤後才不容易有孔洞產生。

After cooling down, put the container in the refrigerator for six to eight hours or overnight, then your handmade Basque cheesecake is ready to serve! If a stroke survivor can make it with a single non-dominant hand, what’s your excuse? Enjoy! Wishing all moms a happy Mother’s Day!
