聽說過年要收假了,不知道大家是不是有「藍色收假憂鬱症」?過新年應該是很多婆媳壓力最大的日子,因為光是下廚就忙得手忙腳亂不可開交還要被嫌菜色不夠豐盛,甚至還有些家庭還會上演女人搶廚房的鬥爭跟心機戰。原本應該是闔家歡喜、家人團聚的大喜日,很多大家庭都成為了壓力的來源。家裡只有一老一殘的殘家過得可爽了。現在剛好疫情期間,外送App夯到不行,我們就趁這次過年把一整年沒吃的垃圾食物通通叫外送回來連續吃到初十五,吃到爽!等元宵又有新藉口繼續吃啦!耶~!以下殘編為您報告這次過年所嘗試的小吃店跟餐廳的食記報告:
殘編回台後發現台灣的假日多到誇張,過年不夠要來個除夕年夜,近幾年來還硬加上「小年夜」,所以這次的15天暴飲暴食挑戰估計會為持到20天以上之久。

Rumor has it that the Chinese New Year holidays are about to end, I’m guessing most office workers are having the “back-to-work blues.” CNY is supposed to be the most important holiday in the Chinese culture, however, for many big families, it eventually becomes the most stressful day of the year, especially for women. Wifeys not only have to face in-laws, but visiting relatives also expect a full-on emperor’s meal for all. sometimes you spend the whole day in the kitchen covered in grease and odor in exchange for complaints about not preparing enough dishes. If you happen to have more than one cook in the family, it’s another battle in the kitchen. Reunion can be stressful for larger families. Luckily, there are only 2 members in my family, 1 elderly and one disabled. So we both are too weak to fight. The COVID-19 pandemic has made food delivery App services super fast and efficient. Thus this CNY, We decide to take advantage of the opportunity and make up for a full year’s worth of junk food from restaurants and joints we usually do not dine at delivered to us and spend a stress-free CNY with no cooking involved. Here are my food blogs and reviews during Chinese New Year so far:
Note: As if we don’t have enough public holidays in a year in Taiwan already, besides the “Single’s Day” that I mentioned before, before CNY we have CNY Eve. In recent years we even added a “pre-CNY Eve’s eve.” So our CNY officially starts 2 days ahead of the actual Lunar Year calendar now. Our 15 days of CNY celebration is followed directly by the Lantern Festival, which gives us another excuse to pig out on “Tangyuan (glutinous rice-balls)”, which I’ve explained in this post. Point is, my CNY pigout #15DaysChallenge may easily extend to 20 days or more. I’ll keep y’all posted!

鬍鬚張開業已數十年之久,殘編最後一次吃已經是10幾年前。當時的經驗不是很好,記得連他們主打的滷肉飯都普普,沒有路邊攤小吃店好吃。最近新聞聽說他們居然上市了,還開到國外去,想說過年再給他們一次機會,結果這次的經驗截然不同,讓殘編拍手叫好!

Formosa Chang has been in business for over several decades. The last time I dined there was also over a decade ago. My last experience was not very good. I remember that even their signature – braised pork rice was disappointing. Fast forward to recently, I heard from the news heard that they went public and even opened locations abroad. So I decide New Year calls for a new start and new opportunities, which means I should give them another chance. The company went IPO for a reason, my experience this time completely changed my mind. Formosa Chang deserves a slow clap.
苦瓜排骨湯原味不油,苦瓜熬到爛到好處,排骨一咬骨肉分離但還保留揉質的彈性。

Judging by the fall-off-the-bone pork ribs, I can tell that this soup requires some time to cook. However, the soup is not greasy at all. The bitter gourd is boiled to soft and melts in your mouth. The ribs meat is fall-off-the-bone tender but retains a fair amount of elasticity, so the texture is excellent.
筍絲魯( $55元)/Braised Shredded Bamboo Shoot ($55NT):
一般吃的筍絲都是罐頭裝的,通常都太油膩,鬍鬚張的筍絲魯應該是自己做的,非常清爽原味。

Most shredded bamboo shoots served in Taiwan are canned and soaked in oil, making them way too greasy, Formosa Chang’s Braised bamboo shoots are house-made. The taste is refreshing and natural.
胡紅糟豆乳腿排 ($75元)/ Chicken Thigh with Red Yeast Rice and Bean Curd ($75NT)一般紅糟肉本來就偏乾,但是鬍鬚張的紅糟肉有附蒜泥醬,這一沾上蒜泥醬跟麥當勞的雞塊沾上糖醋醬有異曲同工之妙,瞬間從馬馬虎虎只衝到爆好吃

Red yeast meat is generally dry, that’s no surprise. Formosa Chang’s ready east chicken thigh is served with garlic sauce. Think McDonald’s McNuggets with and without the sweet and sour sauce. ‘Nuff said.
鬍鬚張的滷肉飯不是那種粒粒分明的飯粒,而是比較綿密的那種,這種米飯加上滷汁可以將滷肉完全熬煮到米飯內,讓白飯吃起來有綿密感,滷汁也完全滲入此每一粒飯粒,讓每一口的吃起來都有滿滿的魯汁味。另外鬍鬚張滷肉飯所搭配的醃蘿蔔跟一班小吃店金黃色的那種不一樣,是偏粉橘色的,口味偏甜,應該是有加過堂醃製過的。

Formosa Chang’s braised pork rice is not the kind with distinct grains, it has a mushier texture. The plus side of adding braised pork to mushier grains Is that the soup can be completely soaked into the rice, making every bite of rice full of meat juice. Most braised pork rice in Taiwan is garnished with a yellow pickled cucumber or radish, Formosa Chang‘s pickled radish is pinkish and tastes sweeter than the yellow ones.

鬍鬚張創業到現在屹立不搖,經過新型冠狀病毒疫情竟還可以跨國上市,十年前跟十年後所吃下來的感想有深深感到他們的品質改戰很多,殘編甘拜下風也推薦各位如果跟我依樣曾有過不好的經驗,可以載給他們一次機會!

Formosa Chang has stood firm since decades ago. To be able to survive for so long and even go public during the COVID pandemic is unbelievable. If you’ve had bad experiences before like I did, I strongly suggest you give it another try, it’ll change your mind.
