殘編最近發現了轟動韓國、在短短十年內開遍全球十二個國家的CAFFEBENE

咖啡 (咖啡伴)居然在台北板橋區也有設分店,並且兼賣韓國道地的小吃殘編兩、三年前造訪韓國首爾曾親自品嚐過CAFFEBENE的咖啡,當時那杯咖啡留給我深刻的印象。

Exciting news! I’ve recently discovered Korea’s famous cafe, Caffe Bene in Banqiao, Taipei.

Combining coffee with culture, Caffe Bene is not just a café that serves coffee, it serves authentic Korean street food, too!

Caffe Bene is one of the fastest growing coffee chains in the world, which originated in Seoul, Korea. I remember a few years back when I went to Seoul and “thought: “I wish we had a good quality coffee chain like this in Taiwan,” and that left me with a positive impression.

忙,也要和你喝一杯咖啡」:雀巢的這句簡單的廣告詞轟動全國,成為經典。英文講所說的“Grab a coffee”通常也不單單的像咱們台灣一樣,去便利商店「抓了」一杯咖啡就走。而是進咖啡店點一杯咖啡,坐下來聊聊天,享受彼此陪伴的意思。咖啡是用來「品」的,不是「喝」的。

English:
Nestle Coffee’s ad line: 「在忙,也要和你喝一杯咖啡」(meaning “as busy as I am, I’ll make time for a coffee with you) has become a classic in Taiwan.
The slogan didn’t really make sense back then, because while to “grab a coffee” never means literally just to “grab a coffee” and go in the west, it was the norm in Taiwan. People just “grabbed a coffee” from a convenience store and go, no extra time required.

咖啡是一門學問,也是影響義大利很深的文化。在當地「喝」「加水」的咖啡,對咖啡師而言無疑是一種侮辱。每當我點美式咖啡,他們甚至不想插手,直接給我一壺沖淡ESPRESSO的熱水,要我自行處理,不想成為抹煞文化價值以及貶低品味的共犯。
英文與義大利文中,幫客人製作咖啡的不叫「SERVER(服務生)」,而是叫「BARISTA (咖啡師)」。

English:

Coffee can contain much knowledge and culture, especially for Italians, hence the word “barista” instead of “server.” Coffee is for tasting, not just drinking.
Ordering an Americano could be an insult to the Italian culture. The baristas there would usually just give you a pot or a glass of hot water with espresso and let you do the “dirty work” yourself to avoid being made an accomplice.

全球咖啡文化越來越普遍,現在幾乎人人每天都會至少飲上一杯咖啡。台灣人保守,容易盲目相信傳言,以前覺得喝了咖啡就會導致骨質酥鬆、粉身碎骨,寧可戒掉咖啡癮也不願意多攝取鈣質,出去走動、曬曬太陽。但是在咖啡製作過程工業化、咖啡店越來越多以及家庭式咖啡機越來越大眾化的趨勢下,國人好像也慢慢能夠接受喝咖啡的文化。台灣的咖啡店如雨後春筍開個不停。

Coffee culture has become a lot more common in Taiwan over the past decade. I remember back in the old days when caffeine was first associated with the loss of bone mass,  rather than consuming more calcium and get more sun; our people would just cut coffee out of our diet completely and think: “We’re good.” Now new cafes and coffee houses pop up everywhere and are almost as common as convenience stores. “Grabbing a coffee” could actually mean going to a café like as in North America now.

可是現在連鎖咖啡店跟自家烘培咖啡店這麼多,又如何分邊咖啡的品質高低呢?(繼續讀。。。)
But like any businesses in Taiwan, how can you tell if a café has business ethics or not? Or if the quality of the coffee is even safe enough to drink? Sorry, I meant “taste”? (Read on…)

好咖啡沒有配一點美食就是美中不足。Caffe Bene 不只把咖啡,而是整套的連韓國的精髓都完完整整帶入台灣,店內有供應韓國當地小吃,像是韓式辣醬炒年糕韓式起士拉麵韓式海苔捏飯韓式壽司KIMBAP)等等,頓時還可能以為自生韓國呢!

A good coffee break isn’t complete without good food or a decent snack. Besides bringing the coffee culture to Taiwan, Caffe Bene also pays tribute to its motherland (Korea) and brings its whole culture to Taiwan. Here you will find authentic Korean street food like Korean spicy rice cake (Tteokbokki), Korean ramen with cheese, seaweed nigiri and even kimbap.

除了韓國的特色料理,還有西洋人習慣拿來搭配咖啡當早餐的貝果。貝果口味有原味貝果蔓越莓貝果、和我最愛的藍莓貝果。配料有殘殘編在加拿大求學時愛點的「天使」(奶油起士)陷料,還有巧克力控必點的「惡魔」(巧克力)配料。原來殘編有一顆天使心。喜歡咖啡陪甜食的可以用銅板價搭配套餐B(+80元)的蛋糕或藍莓優格,或是+120元就有的蜜糖吐司派思脆

English:

Besides Korean food, you can also order your ordinary (not so ordinary in Taiwan) bagel or toast to go with a morning coffee. Bagels come with a choice of “Angel (cream cheese),”my favourite, or “devil (chocolate chunks).” I guess I’m more of an angel. If you like something sweet to go with your coffee, an extra 80NT will treat you to a slice of cake or a blueberry yogurt waffle, and an extra 120NT can upgrade you to a fancy honey toast or pastry.

 

CAFFEBENE(咖啡伴)的咖啡有什麼特色?So what’s so special about Caffe Bene’s coffee?

台灣企業殘編就懶得寫了,反正也是「不屑」(英文)。
How do we know it’s not another “Bu** Shie (a pun on the Mandarin Chinese term “不屑,” meaning “don’t care/doesn’t give a shyt )” business?

CAFFEBENE製造咖啡的原則有五個:Caffe Bene follows five principles when making their coffee:

  • 咖啡原則一,先垬培後混合:

Caffebene 為世界的咖啡品牌,咖啡豆產自於衣索比亞、巴西、哥倫比亞等世界各個不同得地方,Caffebene為了保存咖啡豆當地最完美的咖啡香,採「先垬培、後混合」的獨特製作方法,每日直接將嚴選的新鮮生豆使用韓國最先進的咖啡烘焙設備,依各地區當地最適當的狀態以及烘焙方式烘培,再用最玩美得比例將咖啡混合。這種製作工程可以保有並突顯原豆固有的味道與香氣。Caffebene一直以來都有不斷地進行對於咖啡的相關研究,未來也會不斷以更先進的技術與用心打造出層次豐富、更領先全球的咖啡。

  • Principle 1: blending AFTER pre-roasting
    As a global coffee brand, Caffebene sources its coffee beans from some of the best coffee regions across the world including Ethiopia, Brazil, Columbia, and so on. Blending after pre-roasting requires much cost, effort and time, but Caffe Bene insists on using this technique to bring out and retain the special flavours and characteristics from different regions of its coffee.
  • 咖啡原則二, Farm To Table:
    Caffebene與巴西最大的「IPANEMA」農場簽定合約、製作Caffebene獨家的客製化咖啡:這代表Caffebene會定期派遣咖啡專家前往農場訪察、嚴選出品質最好的咖啡生豆。並且獨家創立了「FTT(Farm To Table)」系統。

    Principle 2: Farm To Table:
    CafféBene has perfected the ‘FTT(Farm to Table)’ system by signing a contract with IPANEMA farm, the largest coffee farm in Brazil, to grow customized coffee through consistent quality management.
  • 咖啡原則三,中度烘培 :
    咖啡烘焙的方法有分輕度/中度/深度三種。Caffebene 的咖啡採用中深度烘培技法,這種烘培法能讓咖啡冷卻也能保有覺佳風味。

    Principle 3: Medium roast:
    Of light/medium/dark roast, Caffe Bene chooses to medium roast its coffee to preserve the beans’ own characteristics.
  • 咖啡原則四,乾淨安全的咖啡:
    Caffebene為了讓顧客享用最好的咖啡、確保咖啡的咖啡的安全與品質,從採收、選豆到烘焙共經歷13道繁複的工法,光是用來挑出咖啡以外的雜質的步驟就有四種。CAFFEBENE的混豆標準符合HACCP, ISO, HALAL等各種食安品質認證以及有機認證,消費者可以安心飲用。

    Caffe Bene
    undergoes 13 procedures to ensure food safety and provide the best quality coffee for its customers, filtering out foreign objects alone takes 4. Caffebene’s roasting plant has acquired various domestic and global quality certifications including HACCP, ISO, HALAL, and organic farming.
  • 咖啡原則五, Roast Master Assistant System
