女人的第六感通常都詭異的準。上一篇食記中殘編就提過,殘媽懷我時可能吃了什麼或接觸到什麼讓我基因突變的東西,我對食物跟男人對性一樣,對美食不但無法抗拒,直覺也超準。殘編這個肚子通常總是被虛華的米其林星級餐廳牽著鼻子走,前兩天無意經過一家位於三芝靠近淡水邊界、外觀看起來很樸素的「瑪莎菈印度餐廳」,我的直覺此時卻堅決的告訴我:「這家一定超厲害!」,於是就拿出手機,加入我的踩點名單內。機會是留給準備好的人,於是最近爆瘦到像人乾的殘編隔天就直接殺去。

So in my case, I have a freakishly precise sixth sense when it comes to food or fashion. I know a good restaurant or a quality fashion piece when I pass by one. My son of a B ex freaked out every time I set sight on a product because they’re always the most expensive one. What can I say? I have good taste. Usually, I spot Michelin starred restaurants, but this time, when I passed by the humble-looking Masala-Zone Indian Restaurant in Sanzhi, that feeling just hit me, so I took out my phone and added it to my list. Opportunities are for those who are ready, and I’ve been losing weight for no reason again, so we schedule our visit for the next day.

果不其然,馬莎菈位於淺水灣旁,有觀海座位,老闆不知是道地的印度人還是巴基斯坦人,但一進門就感覺置身印巴世界。不但播放著印度歌,一進門就是一整櫃採自巴基斯坦境內喜馬拉雅山脈礦場的天然結晶鹽岩所製成如水晶般珍貴的鹽木晶燈,值得買回家收藏展示。鹽水晶如紫水晶和其他寶石一樣,鹽水晶燈係經百萬年累積成形的天然地底結晶鹽礦,深度可達至七到八千呎。瑪莎菈進門所展示的鹽木晶燈呈亮麗的橙黃色,每只重兩公斤以上,放在家裡有如任何水晶一樣貴氣。據說這種鹽木水晶還有能產生有益身心健康的負離子,可過濾空氣中的污染。進門的櫃檯似乎也是用這種珍貴的天然結晶鹽水晶打造而成,散發著亮眼的橘色光。水晶燈旁邊的櫃子則販賣一系列的正宗印度香料、天然玫瑰鹽、咖哩、料理包、辣醬、米飯等珍貴食材和沐浴鹽。

Boom! My instincts proved me right again. Located by Qianshui Bay (Qianshuiwan), Masala-Zone Restaurant has a beautiful view of the waters. It is also authentic to a point once you step inside, you are transported to India. The owner is Indian; the music plays Indian; you breathe India. Once you enter the restaurant, a whole cabinet of precious Himalayan salt lamps is on display. These crystal-like salt lamps are available for purchase and will make your one-bedroom apartment look like a 10 million mansion. Like amethysts and other gemstones, these crystal-like lamps are made from “Salt Rays” accumulated and crystallized over millions of years mined from the Himalayas. These stones are mined from up to seven to eight thousand feet under the surface. The salt lamps displayed at Masala-Zone are Salt Rays mined from the region of Pakistan. They have a bright orange/yellow glow. Each of them weighs over two kilograms. It is said that salt lamps can produce negative ions beneficial to physical and mental health and help filter out pollution in the air. The counter at the door has the same glow as these lamps. I’m guessing it’s also made of these precious gemstones. Next to the crystal lamp shelf, there is a cabinet with a collection of authentic Indian spices, Himalayan salt, Indian curry, meal packs, hot sauce, Indian rice, and bath salts, all available for purchase.

光是咖哩類就分類成「羊肉」、「牛肉」、「海鮮」、「手工乾酪」和「蔬食」類等好幾頁的菜單,瞬間就將殘編造訪名單已久的「番紅花」米其林印度餐廳比下去。與其去吃高級的番紅花,我寧可先多訪幾次道地正宗馬莎菈,待每道菜都吃完一遍後再說。
馬莎菈有中國回教協會的「清真」認證,因此菜單上自然沒有豬肉料理。殘編之前訪問過開中東料理餐廳、在中東料理界有

25年以上經驗的資深老闆,得知在台灣要獲得「清真」認證非常不容易,所以台灣的穆斯林朋友可以放心來吃。下次中東朋友來造訪就決定帶他們來這。菜單第一頁是「配菜」,有我們在約旦時最愛吃的「優格」。「印度酸果」旁邊有三根辣椒辣度,但吸引殘編的是註解上的「酸」。

The curry section alone is categorized into “lamb,” “beef,” “seafood,” “handmade cottage cheese,” and “vegetables,” which spans several pages of the menu already. The menu instantly makes the Michelin-starred fine Indian Cuisine restaurant “Saffron,” which has also been on my bucket list, look bad; and made me have a change of heart. I’d rather finish a round of everything on the menu at Masala-Zone Restaurant before visiting the highly acclaimed Saffron.
Masala-Zone Restaurant has the “Halal” certification from The Chinese Muslim Association, so there are no pork dishes on the menu. I have interviewed a Middle Eastern restaurant owner who has over 25 years of experience in the Middle Eastern cuisine industry. He told me that it is tough to obtain a “halal” certificate in Taiwan, so Muslim friends in Taiwan can eat with a piece of mind here. Next time when we get together with our Muslim friends, this is where we’ll bring them. The first page of the menu is “Condiments,” featuring our favorite “plain yoghurt” during our days in Jordan. There are three chili peppers next to “Mix Pickle,” but what intrigues me is the “sour” note in the annotation.

阿拉伯人吃優格不加糖,殘編以前最愛跟殘媽一起做耗時耗工的原味發酵優格,雖然製作時間久,但製成後嚥下的那一口酸到讓我擠眉弄眼、從脊椎酸到全身顫抖,再到頭頂的爽感,一切都值得了。瑪莎菈的「原味優格」應該是沒加糖,但也沒咱自家做的酸,所以是一般人都可以接受的健康順口。這道建議一人點一份,因為今天雖然只有殘家兩人,又是第一次造訪,不知道瑪莎菈的「無添加」是真還是跟超商的詐騙包裝一樣,所以就先點一份。但吃到後面,我倆都越吃越快、越大口的現象,抬頭一對眼,雙方還帶有殺氣。除了「原味優格」外還有餐廳推薦的「香料優格」,這道下次再點。

Arabs eat yogurt without added sugar. One of my favorite childhood memories is making time-consuming yogurt with my mom from scratch. Although it takes time and labour, the moment you take your first bite and the sour taste shoots up your spines and brains; everything is worth it. Masala-Zone‘s “Plain Yogurt” has no added sugar, but it’s also not as sour as the ones we make, so don’t freak out. It is a healthy dish with a smooth taste that most people can accept. I recommend an order for each person. A party of 2 of us only ordered 1 to share to test it out. It’s our first time at Masala-Zone, and we all know packaged yogurts in Taiwan labeled with “sugar-free” are all bull. Who knows if Masala-Zone follows the Taiwanese standards? After a few scoops of the “Plain Yoghurt,” tension starts building up, our eating speeds up. By the time we meet eyes, we both know the game is on, and the rest is war. Besides “Plain Yoghurt,” the “Raita” with a recommended thumbs up is also homemade yogurt with the addition of minced cucumber, onion, and tomato. We leave this one for our next visit.

「印度薑黃飯」/ “turmeric rice””

瑪莎拉印度烤餅正宗,喔!謝天謝地!殘編終於吃到正宗印度烤餅,而不是什麼「皮塔餅」或「口袋餅」的冒牌貨了!馬莎菈印度烤餅烤得蓬鬆,一定要用手撕才夠味,吃起來口感鬆軟,乍看之下像雲一樣蓬鬆,但一入口跟口水中的唾液酶混合後,又變成稍帶嚼勁的口感,食材的香味也慢慢跑出來,甚至不沾醬都可以細細品嚐出其中的麵粉香,超讚的!瑪莎拉光是「烤餅」就有分「原味」、「奶油」、「茴香子」、「芝麻子」、「焦糖」、「新鮮蒜」、「洋蔥」、「純麥呷巴」、「奶油純麥呷巴」口味,單點價格位於$50元到$100元之間。除了「烤餅」以外,也可選擇搭配「餡餅」,餡餅有鹹的和甜的,單點價格比「烤餅」超為高一點,位於$100到$180元之間。

Hallelujah! Masala-Zone Restaurant‘s naan, which is spelled “nan” on their menu, is authentic, and not some “pitas,” “tortillas,” or other wanna-be flatbreads! Masala-Zone‘s naan is baked to fluffy. The texture is soft and fluffy like a cloud at first, but once it meets your amylase (enzymes in the saliva), it becomes slightly chewy. Aromas of the flour slowly come out as you chew, and it is delectable even without the dips. “Nans” alone on Masala-Zone Restaurant‘s menu features a ton of flavours, including “Plain,” “Butter,” “Jeera,” “Till,” “Sugar,” “Garlic,” “Onion.” “Plain Roti” and “Butter Roti” are also available. Price ranges from $50NT to $100NT each if you order them a-la-carte. Sweet and savoury “Paneer” and “Cheesenans are also available, priced from $100NT to $180NT.

I ordered this dish because I was intrigued by the three chili peppers’ spiciness level and the note below that reads “especially hot and sour.” Pickled mango and lemon are mixed with chili. The kick is a big fat kick in the A-S-S. We each can only take one bite. This dish is a must for spicy food lovers, but for those with a weaker stomach, be careful.

「瑪莎拉羊肉咖哩」加入新鮮的洋蔥、蕃茄、青椒和香料烹調而成,羊柳條量多、鮮嫩肥大,肥肉部分入口即化,瘦肉不分鮮嫩、一點都不柴,上面灑上香菜跟薑絲提味。這道不管是配飯、手抓烤餅都欲罷不能,殘編沾烤餅吃到見底,把盤中最後一滴汁都不浪費的清光光,乾淨到吃完的空盤廚房都不用洗了。

Mutton Masala” is prepared with tender lamb slices sauteed with onions, tomatoes, and ground spices. The portion of the lamb is generous and includes big chunks of lean and fat meat. The lamb fat melts in your mouth while the lean meat remains fresh and tender. The dish is sprinkled with coriander and shredded ginger to enhance the flavours. This dish is bomb with either rice or naan. I couldn’t stop before wiping the last drop with my naan until the plate is shiny clean. I guess the dishwasher can save some water for this one. You’re welcome.

這道是馬莎菈「手工白乾酪類」系列的咖哩瑪莎拉用純鮮奶萃取製成的茅屋起司,使其保存鮮奶的高營養成分、用僅剩三分之一的酪蛋白製成如豆腐般的乳酪,口感滑順入口即化,口味跟口感都似奶油一樣滑順,卻沒有奶油的膩。這道咖哩是馬莎菈餐廳招牌菜之一,將菠菜打成泥跟手工白乳酪翻炒,再加入印度香料、更多起司和薑。菠菜泥跟白乳酪完美融合在一起,香料味不會太重,很容易就融入口中。
瑪莎菈菜單後面標榜自己餐廳的咖哩是「北印咖哩」,不但是天然辛香、低鹽、低脂的料理,還有促進食慾、發汗、排毒等作用。
咱看到時先懷疑:「咁啊ㄋㄟ ?印度咖哩阿不都口味較重?」但整餐吃下來,真的是所有盤子都被舔乾淨了,好幾塊肥美的羊肉也都吞進肚子裡了還是很舒服,完全沒有過鹹或過油的不舒服。神奇的是,殘編回家途中還真的全身發熱。不知是羊肉還是其中的的辣味辛香料的作用。單純好吃到G點,搞到我「發騷」。反正立刻見效還蠻神奇的。

This dish falls under the “Cottage Cheesecurry section. Masala-Zone Restaurant‘s cottage cheese is made from pure fresh milk. It preserves the milk’s high nutritional content and results in a cheese with a tofu-like texture. The taste is smooth and melts in your mouth. The texture is similar to cream but not as greasy. This curry is another signature dish with a thumbs-up beside it. Spinach is pureed and stir-fried with handmade cottage cheese, mixed with Indian spices, more cheese, and ginger. The spinach puree blends perfectly with the cottage cheese. There are not too many spices in this dish, making it easy to eat and melts in your mouth smoothly.
The back of Masala-Zone Restaurant‘s menu reads, “the restaurant‘s curries are “North Indian Curries.” which uses natural spices, less salt, and less fat. It also lists the benefits of the spices, which include increased appetite, sweating, and detoxification.
At first, we were suspicious, but after demolishing everything and licking every plate clean, our stomachs are at ease and felt no burden. I believe everything at Masala-Zone Restaurant is made natural. What’s impressive is that I start to burn on our way home. I don’t know if it is the lamb or the spices. Or I’m just simply feeling “hot” from reaching my food orgasm.
