台灣水餃、鍋貼的麵食連鎖鋪店餐飲集團前兩強不外乎就是大家耳熟能詳，隨處能見的八方雲集和四海遊龍啦！
殘編買過四海遊龍的冷凍水餃，殊不知水餃口味中，單單最基本款的「高麗菜水餃」就勝過其他水餃麵食店所出、用各種不同虛華、獨特食材所研發出千變萬化的水餃口味。
這兩年搬到淡水後，才第一次吃到附近的八方雲集水餃。殘家一試成主顧，因為八方雲集實在是太好吃啦！好吃到殘編不得不上網研究查查一番，一探究竟這家八方雲集到底是什麼來頭。

Taiwan‘s food scene is filled with various dumplings and potstickers restaurants. We eat them for breakfast, lunch, dinners, or anytime when we just need to grab a quick bite. Among the myriad of dumpling chain stores, the top 2 that stand out are, nevertheless, Ba Fang Yun Ji Dumpling (8 Way) and Yuloong (Si Hai You Long), which are familiar to everyone and can be seen everywhere within walking distance.
I have dined in and bought frozen dumplings from Yuloong ( Sihaiyoulong) before. Let me tell you, Taiwan‘s dumpling industry leader is crowned king for the right reasons. Even their most basic flavour, “pork cabbage” dumpling tops any other “handmade” brands with fancy flavours prepared with various precious and unique ingredients, which, compared to Yuloong‘s cabbage dumpling, is an apparent “trying too hard.”
After moving to Tamsui in the past two years, I had my virgin Bafangyunji dumplings nearby. Our household has been its loyal customers ever since because BaFang Dumpling is simply delicious! It impressed me to the point that I had to do some research on the Internet to find out what its deal was.

In addition to the HACCP and ISO 22000 certification, BaFang Dumpling also received the New Taipei City Government Food Industry Medal of Excellence in Hygiene, further reassuring its customers of its food preparation process. BaFang Dumpling is the first SGS accredited Chinese restaurant, a significant milestone for this chaotic island.
Inspections are also conducted on the food served on the table. Results of the assessments are fully disclosed on the website. Consumers can see the results of over 3,000 individual annual tests. 八方雲集的經營歷史可以追溯到 1998 年創立品牌並開設第一家八方雲集門市分店據點的大門。 到 2003 年，八方雲集迅速擴張到全台超過 100 家分店店鋪。
到 2008 年，八方雲集國際化進軍香港市場，並在同年開設了5家分店。
到2014年，八方雲集在中國福州完成中央廚房的建設，正式開始在中國大陸的業務拓展。

Ba Fang (8 Way) ‘s business history dates back to 1998, when it first founded the brand and opened the door to its first location. By 2003, BaFang 8 Way Dumpling had quickly expanded to over 100 stores throughout Taiwan.
By 2008, Ba Fang (8 Way) Dumpling has taken its business internationally to the Hong Kong market, with five stores open within the same year.
By 2014, Ba Fang Dumpling (8 Way) had completed the construction and preparation of its central kitchen in Fuzhou, China and officially started its business expansion in mainland China.
In 2019, BaFang started the “Liang She Han Buy Good” brand and opened 32 stores in Taiwan. The number of stores under BaFang corporation has reached over 1,171 stores worldwide.

這道是殘編的最愛，超大顆的鮮橘色水餃以鮮嫩雞腿肉加上養生蘿蔔葉與高麗菜精心調配出來的內餡，再以天然紅椒皮包製而成，清爽又不失飽足感。這道水餃除了雞腿肉不摻雜任何其他肉類。

Starting with my favourite, “Vegetable & Chicken Dumplings.” This item is prepared with no other meat than tender chicken thighs. 裡應外合的菜肉和風大抄手外表翠綠、內餡是自然、原始原味的菜肉內餡。飽滿的餛飩過水川燙過後淋上甘醇的和風醬，淡淡的和風醬帶出菜肉餡的香甜。原始原味的自然食材味道餘繞於口中，嚥下是毫無負擔的滿足感。

Taiwanese Kimchi is marinated in white vinegar and sugar. Usually, Korean kimchi is spicey, whereas Taiwanese-style kimchi is loaded with sugar. Bafang Yunji‘s “Taiwanese Kimchi” is mild and not overly sweet nor spicy, with a hint of sourness. The crunchy texture indicates the freshness of the cabbage and makes an excellent side dish for a palate cleanser between heavier dishes.
